lunchbox love :: a salad parfait

Hope you enjoy your lunch today honey!

Here is how I layered Ryan's salad parfait today*:

olive oil
chickpeas (to marinate in the dressing)
broccoli (so beautiful at the farmer's market right now)
red bell pepper
lettuce (on top to stay crisp)
toasted seeds (pinon, sunflower, pumpkin)

ready to dump onto a plate and enjoy

(snack: almonds for your pocket xo)

*you can prepare a salad parfait up to 5 days in advance

    I love layered things. I also like to have the butter on my popcorn at the cinema layered.
