Our Christmas Star

Gracie made a beautiful star during a recent Waldorf inspired class and we decided today that it would be the best topper for our tree.

Solstice Salad

We enjoyed making this salad today for a child led potluck at our Nature Awareness class. The children enjoyed it as much as the adults so I thought I would share the recipe. It took us ten minutes to whip it up this morning and it was enough for a crowd. We will probably make it again while we have family visiting over the holidays.

Sosltice Salad:

2 cups quinoa (4+ cooked)

1 cup chickpeas

1 cup kindney beans

1 bunch of purple kale finely chopped

s+p

1/2 teaspoon dried dill

olive oil

white balsamic vinegar

We took a whopping 600 (!!!) photos today in the back fields trying to capture our annual family photo. The light was beautiful as the sun was setting and we had so much fun! Here are a couple of my favorites.

Thankful

I am so thankful for this wonderful man that I met 14 years ago. Thank goodness for cafe au laits. Happy "Anniversary" Honey.
